Parsley should be planted from seed even though it takes a long time to sprout because it needs to descend into the underworld and return before it sprouts. Parsley is a psychopomp and a necessary or desired ingredient in many italian dishes. Parsley is not one of the four evangelists of Italian Cuisine, but it's two cousins Carrots and Celery are. I'm not sure how Parsley fools about this. I consider Parsley to be essential
